Below you can find the location of every collectible in Chapter 11 of A Plague Tale: Requiem.
Feather #1: European Goldfinch. After blowing the first gate open in the underground section, look through the wood on the right in the next room. Behind it is another explosive barrel. Hit it with an ignifer sling to open up a path to the room with the feather in it.
Knife #1. After going through the next gate that you blow up, head to the right at the end of the corridor to find a knife in a skeleton.
Souvenir #1: The Chateau d’Ombrage. In the massive room where you get attacked by rats, go to the cart on the righ with the help of Sophia's prism. Push it to the rocksright. Here use Sophia's prism again and go towards the edge where you can drop down and find the souvenir.
Souvenir #2: His Toys... After going over the bridge in the area with the carts, there will be a cutscene in a room with a massive door. Here look for a door on your right with a red flag. Command Hugo to crawl through the gap to open the door. The souvenir will be on the other side.
Secret Chest #1. After the big door where the previous collectible was, you will "jump" down from a bridge to the lower levels infested with rats. After making your way through the area with rats and squeezing through some chains, you will have to break another chain to squeeze through again. Here look to your left for some more chains you can squeeze through to find the chest.
Tool #1. After the chest you will have to push a cart. Then clear a blockade with the help of Hugo & Sophia. After this, just before you get to the end look to your left to find the chest containing the tool. You can use tar on the cart's brazier to get rid of the rats.
